Last year one of my teacher friends, who attends Weight Watchers meetings, told me about this awesome recipe for pumpkin muffins. It is super easy... only 3 ingredients: a box of spice-cake mix, one 15 oz pumpkin puree, 1/2 cup water.
Mix together and pour into muffin tins.
It makes about 24 muffins with each muffin being about 100 calories. I love these! They are moist, easy and well stay fresh for several days. I have plenty for the week and plenty for sharing at work.

Oh yum! I made some pumpkin muffins using yellow cake mix this morning, plus some cinnamon, nutmeg and cloves. I'll have to try the spice cake mix.
We made these a long time ago and I was thinking about them just the other day, but haven't gotten around to looking up the recipe. These might be good to haul on the airplane this weekend too!
I've never made these with a spice mix, but I have with a chocolate cake mix, and it doesn't taste like pumpkin at all! It's great when you want a chocolaty treat and not feel guilty. They are moist and delicious, and they cam be frosted w/fat free cool whip. Yum!

We make these the Hungry Girl way which is the same except no water, then bake at 400 for 20 mins. They are so delish!!

Yum! I am a big fan of pumpkin. I am excited to try this:).
I also make those with chocolate cake mix. When they cool down, I put them in a freezer bag and freeze them. Then, when I want a chocolatey snack, I can grab one from the freezer and defrost it. YUM!
YUM! I've had those with the chocolate cake mix too and they are so good. I like the idea of pumpkin though... YUM!
With all the pumpkin deliciousness all over the blog world I may be heading to Starbucks soon for a pumpkin latte! YUM!
