A Labor of Love

With today being Labor Day I feel that summer is coming to an end.  One of my favorite parts of this past summer was my mom's garden!  She has worked since January/February growing seeds and seedlings, planting, tilling, picking, pruning, etc.  There are still a few things still growing but it won't be too much longer until the first freeze and the garden will be done for the year.  I can't count the number of times I have gone to her house or the garden with an empty bag and returned with beautiful, yummy vegetables.  I dread the day I have to breakdown and buy a grocery store tomato after her homegrown goodness all summer.
Tonight's dinner (like pretty much all Meatless Monday) meals have featured her veggies.  I used the veggies to make roasted veggie sandwiches:  eggplant, green peppers, zucchini (unpictured), squash and onion (my only store bought veggie in the sandwich).  Every vegetable was ripe and delicious.  The sandwich included a mayo/yogurt basil mixture with some mozzarella cheese melted on one piece of bread.  I served it with a broccoli salad (a winner side dish) and some grapes.  
Too often (especially with my mom) I forget to say thank you enough but tonight I am thanking the wonderful, beautiful lady who nourished her garden with time, sweet, and love in order to grow such great produce!  I also think she raised two great kids too!

Aww! I wish my mom had a green thumb. She's very good at killing any sort of plant that comes her way! I still love her despite her short comings! Hehe!

And yes, I totally think Garmin will change the way I run. One of my friends bought hers to "bribe" herself into running... and I think that's what mine will be too. I'm much more aware of my actual pace now!

Moms are so great! And that's such a cute picture! :)

I just read your other post about the 10k, and all I can say is...you can *definitely* do it!! :) My best advice is to keep running in all temperatures and weather conditions, and dress accordingly. I find my biggest problem is if I stop running for a while, and go from warm weather to suddenly cold. It does a job on the lungs! But if you run on a regular basis, then your body is pretty good about adapting. And be prepared with running tights/shorts/leggings and long sleeved wicking t-shirts once it *really* starts to cool down. :)
