Today is our fourth Monday of Meatless Monday. I decided to interview Husband. He has been the person most involuntarily affected.
Q: Have you noticed a change in our Monday night meals?
A: Ha! Yeah you made me go meatless.

Q: What's been your favorite meatless meal so far?
A: I really liked the fajitas. We had avocado, vegetables and black beans. It all went together well.
Q: What meatless meals would you like to see in the future?
A: I would like to have the fried tomatoes and whole wheat pasta. Aren't we doing that tomorrow. I think omelets are good and casseroles would be great.
Q: What don't you like about M.M.?
A: Not really, we eat meat other nights. My only complaint is that I am a picky eater and there are some vegetables I don't like. I don't like squash or eggplant which were both in the calzones tonight.

A: No. Our meals included lots of pasta dishes. I can't remember a whole lot of meals that didn't include a meat. There was always usually meat included in the meals.

Q: How do you feel about the foods we've been eating in general?
A: I like the variety we have now. Not that our first year of marriage wasn't wonderful in terms of cooking. But we were both probably bored with the repetition of it. Q: Is there anything else you'd like to add about meatless Mondays?
A: I've noticed you're not losing a lot of the taste or the flavor without the meat. We've done all the meals you've made meatless with meat and they're just as good meatless. You don't have to rely upon meat. I think there is a stigma about meatless or vegetarian meals, like it won't have substance or taste but in some cases the meatless meals taste even better.
So tonight we made calzones with the left-over veggies (squash, zucchini, green peppers, eggplant, onions) that were grilled last night. A classic is a classic.

Question: What's your weakness food? Weakness foods are the foods that you just enjoy and have a hard time turning it down when given the option. I love cereal! I love pretty much every variety of cereal. And although I know I should use portion control with it, I sometimes don't (like today).

Hi! I found your blog and really enjoy your thoughts about nutrition and exercise. I'm a teacher as well and know that this time of year is when it all starts to get stressful.
Anyway, my weakness is peanut butter. I want to take it out of my house, but I have a 16 month old who loves it. Sometimes that is all I can get him to eat, and so I keep it in the cabinet.
There is A LOT of inner dialogue when the craving strikes, and I am sad to say that many times, the peanut butter wins! :)

You are doing great. Your food journal looks pretty healthy to me. A little cereal shouldn't hurt. So long as it's not fruity pebbles. LOL!

I love cereal too (and the mini-wheats...yum!) but my weakness definitely has to be ice cream. I could eat it any time of the day (I've had it for breakfast before), any time of the year, multiple times a day. I just love it!

My weakness foods change with my "season of obsessions." haha--but right now it is any nut butter with a cinnamony-whole grain bread. All warm and melty.
I am always weak when it comes to granola too. AND warm brownie sundaes. :)

My weakness food is ice cream. I can never say no! Although I've gotten good at portion control with it :)
My weakness is also ice cream! I keep it under control by keeping low-calorie ice cream bars in the house and then limiting myself to one. I cannot keep a tub of ice cream around because I would eat way too much in one sitting. I could go through a tub of ice cream in 2 or 3 days if given the chance!
I'm with you on the cereal! I have a special bowl that I like to portion it out into as my night-time snack. Otherwise I could eat bowlful after bowlful...I think it has something to do with the mix of cold milk and crunchy cereal peices. It can be very addicting! :D

My weakness is usually ice cream, although I've been experimenting with alternatives because too much sugar just does not make me feel great afterwards.
And peanut butter. I eat it almost every single day, but I measure it out.
Cereal is definitely my weakness as well...hands now...no competition. Doesn't really matter what kind either! :) I think it's the crunch + sweet. Perfection. I love it, but I hate it at the same time. :)
Recently, rather than trying to avoid it all together - I make a promise to myself that I WILL use portion control. Otherwise, I have to avoid it all together. Too bad it's always in the house b/c Andrew loves it, too.
